Beet Infused spiced up Tofu over Quinoa *Vegan

If you aren’t marinating your tofu you’re doing it wrong. Tofu literally taste like nothing without doing this. But if you want to kick it up a notch in the kitchen take some time to let your tofu sit in a flavorful liquid before you cook it, it adds so much to it and really you only need 30 minutes. If you have longer go for it, tofu can marinate overnight if you want it to. But I’ve never experienced a tremendous difference by doing this but it also didn’t make it taste worse. So say if you know you’re not going have 30 minutes to marinate tofu right before you cook it do it the night before.

While letting the tofu marinate you can start on the quinoa which is so amazing and easy to make it’s kinda ridiculoouusss. If you make quinoa with just regular water I’m sure you have been disappointed. Even if you thought you weren’t you will be after you try it this way. 


Boiling your quinoa with a broth brings it to a whole new level. I use this vegetable broth because it lasts forever and it is tasty. Simmer your quinoa until the water is gone. After grab a fork and fluff the quinoa to keep it from sticking together.


Now to the beets. I use to hate beets then I learned how good they are for you and if you mix beets with the right stuff it doesn’t taste like dirt. Like I really think this smoothie is a easy way to eat beets if you aren’t going to cook them. Surprisingly the chocolate beet combo works out pretty delicious! 😋 
Honestly.😬 beets are great for your skin, liver, and hair. Which are things you need and want to stay healthy, of course, so go ahead and try it.


Marinating tofu with beet juice, rosemary, lemon, and crushed red pepper is one of the better decisions you will make in your life.

After you let your firm* tofu marinate on to my favorite part… pan frying it! Take the tofu out of the marinade and into a large pan with oil. Cooking tofu on med/high for about 7 minutes on each side until it is crispy. This adds a nice contrast of texture. You now have a somewhat soft inside and now a nice crisp outside. You’ll know it’s ready when both sides are medium brown. I like mine extra crispy. 

Once the tofu has cooked transfer it to a dish. After add the beets, beet juice, and seasoning to the pan to heat it up so you can serve it with your quinoa and tofu. Then if you haven’t already eaten all the tofu you’ll have enough food for a big dinner for yourself or a reasonable dinner for two. As for the recipe below I am only cooking for myself but I like to have leftovers since I don’t always have the time to cook food like I really want to…. so this recipe makes about 2 servings.


*make sure you are buying firm or extra firm tofu as softer tofu will not hold up in the pan frying method.
