Quinoa and Chickpea Fresh Fruit Salad
This salad is so good even though the recipe says it serves 4 people it’s possible to eat this on your own!…. If you have the will power. BUT it’s very filling so you won’t need to eat it all …even still you will definitely want to!
The savory greens, red peppers, and Kalamata olives.
I really like to get my protein so I’m using both Quinoa and Chickpeas. But one or the other will do just fine if you want an even lighter salad.

Boiling your quinoa in a vegetable or chicken broth gives it 110% more flavor!

Here are the sweet fruit additions: craisins and mandarin oranges. These add juicy flavors and a refreshing taste!
Goat cheese is creamy and slightly sweet making it the perfect cheese for this salad! It brings together all the wonderful flavors in this food creation.
Mix it all together. Top with crumbled goat cheese and chives. You get a salad bursting with delicious flavor.

Yes you can use it as a meal prep too that’s what I did! It will last for about 4 days in the fridge. Just don’t add the cheese until you are about to eat it for the day.
